I’m behind on my posts.  It’s been a busy and fun week and I have been doing a lot of other things during Blake’s nap.  See, that is the time I have to blog, clean and do the odd job and/or chore.  This week has been hectic and the blogging has been put aside.  But, I made Pork Carnitas for this past Tuesday night dinner and they are definitely worth posting.  I slow cooked them for 10 hours and when they were ready, they were tender, moist and extremely flavorful.

Tuesday night dinner this week was awesome.  This is my Mom’s b-day week, so I ramped up the menu and we had some extra people at the party which is always more fun.  Katy and Makenna came by and Shannon’s friend Andy stopped over too!  I had plenty of food, since the store had a huge sale on pork butt and the smallest one they had was 12 pounds!  I fed an army and had leftovers to boot!  We also celebrated with a Tres Leches cake which was fabulous, although I really should have made it a day ahead.  The “Leche” part needs that time in the fridge to make the magic of that cake come to life.  So, without further adieu, here is this weeks Tuesday Night Dinner Line Up…

The Carnitas was an inspiration from watching an episode of Diners, Drive-Ins  and Dives.  They featured Los Taquitos in Chandler and the way they made their pork was with cola and evaporated milk…well, this sounded delightful so I had to test it out in my kitchen.  Here is my own version of their pork carnitas.

Slow Cooker Pork Carnitas

Pork Butt – Any size between 8-12lbs

1 Can of Coke

1 Can Evaporated Milk

2 Cinnamon Sticks

1 tsp of each of the following – Nutmeg, Cumin, Oregano and Chili Flakes

4 Crushed Garlic Cloves

2 Bay Leaves

1 Orange – The Rind and Juice

2 Tbsp Chicken Base

Salt and Pepper to Taste

In a separate bowl mix evaporated milk, cola, nutmeg, cumin, oregano, chili flakes, chicken base, orange zest and juice from 1 orange, crushed garlic, salt and pepper.

Put Pork Butt in the Slow Cooker.  Add cinnamon sticks and bay leaves.  Pour marinade over the pork butt and put lid on slow cooker.  Put slow cooker onto the lowest setting and let it cook for 8-10 hours.

When cooking is done, take out of slow cooker and shred with a fork and put a little bit of the cooking liquid on the shredded pork to stay moist.  Serve immediately as a taco or burrito with either corn or flour tortillas.

Corn and Avocado Salsa

1 package frozen Corn or 4 ears of fresh corn off the cob

1 Jalapeno – small dice with seeds and membrane discarded

1/2 small red onion – small dice

Handful of Cilantro – diced

6 – 8 Radishes cut in half, then into small half-moon shapes

1 Avocado – Diced

Juice of two limes

3 tbsp White Vinegar

1/2 tsp Oregano

1/2 tsp Cumin

1 tsp Garlic Powder

Salt and Pepper to Taste

In a small bowl mix the juice of two limes, vinegar, oregano, cumin, garlic powder,  salt and pepper…set aside.

Put your diced jalapeno and red onion in a medium bowl.  Add the sliced radishes and corn.  Sprinkle in the chopped cilantro and lightly toss.  Add the vinegar, lime, spice mixture to the medium bowl and mix.  Take a small taste and readjust seasoning.  Right before serving, stir in chopped avocado.

Tres Leches Cake

Adapted Tres Leches Cake Recipe By Chelsie Kenyon, at About.com

  • 1 1/4 cup cake flour
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1/3 cup oil
  • 5 eggs, large
  • 1 teaspoon plus 1 teaspoon vanilla extract
  • 1 cup plus 1/2 cup milk
  • 1 cup sweetened condensed milk
  • 1 cup plus 3/4 cup heavy cream
  • 1 tablespoon rum
  • 1 pinch salt
  • optional garnishes- fresh berries or cinnamon

Preparation:

Combine flour and baking powder and salt. In a separate bowl, combine the oil, sugar, and 1 teaspoon vanilla extract. Add the eggs to the sugar mixture one at a time until well combined. Stir in the 1/2 cup of milk, then gently fold in the flour mixture a little at a time.Pour batter into a lightly greased cake pan or baking dish and bake at 325 degrees for 30-40 minutes or until it feels firm and an inserted toothpick comes out clean.

Let the cake cool until it feels room temperature. Turn it over onto a platter with raised edges. Pierce cake with a fork 20-30 times. Let it cool in the refrigerator for an additional 30 minutes.

Whisk together 1 cup milk, 1 cup sweetened condensed milk, 1 cup heavy cream and rum. Slowly pour over cooled cake. Refrigerate for 1 hour. Occasionally, spoon the milk runoff back onto the cake.

In a mixing bowl, add 3/4 cup heavy cream, 1 teaspoon vanilla and 1 Tablespoon sugar. Beat until peaks form. Spread a thin layer over the cake.

Top with a sprinkle of cinnamon or garnish with fresh berries.

***I chose not to make fresh whipped cream for the top, I thought it was rich enough.  Also, I added fresh grated cinnamon and nutmeg to the milk mixture before I poured it onto the cake….Finally, I would do the night ahead so the cake has the most absorption time.

Okay, we are trying to get back on track. I think between the Canon breaking, being stupid and erasing some pictures and Brook being out of town, I have missed about a weeks worth of pictures. So, I have thought about it and instead of having “blank” days, I am just picking up where I left off. No matter what, once this experiment is over, there will be at least 365 days of pictures which have been taken and it will show the growth of these two kiddies. I can still make this work!

I Might Not Have The Words…

If I had one wish, I would wish that everyone could live a healthy life till they are 90.  Then, if the body wanted to start a malfunction process, well at least each person had the chance to live a full life.  I myself am aiming for the century mark.  I know that I can control some aspects of my health, but there are other forces at play too.  Unexpected things that might hinder my progress to the hundred mark.

I also wonder about the fairness of life.  Why some people get to experience the joys of life, while others don’t.  If I really sat down are truly thought all this through, I think I would feel hopeless…

But, that isn’t what this conversation is about.  It’s about celebrating your moments when they happen.  Trying to turn your bad days around and to remember that each day is a gift and each person that you love should know just how much you love them…

Today Sara Sullivan lost her battle to breast cancer.  Her daughter Chloe was born September 9th.  I don’t know these individuals, but I can’t help but feel grief for her, her husband, daughter, family and friends.  This should have been a different time for all of them…joy, exhaustion, love, laughter and beginnings…

It’s just so unfair and sad.  I feel so sorry for her.  I know she is gone, but to finally have her baby and all the hopes and dreams that Sara must of had for the future and for her family and for her to not live it…

It breaks my heart…

I promise to live, laugh and love just a little more in honor of those dreams this new Mommy had.

I also promise to walk/run in honor of Sara next month during the Phoenix Susan G Komen event.  I don’t really know what else to do, but I can do that.  She’ll be on my back along with Karissa and Mom F.  One day all this walking will create enough money to find that cure.

To everyone that knew and loves Sara…I am so sorry for your loss today.

The Game of Life…

This past weekend was supposed to be calm and relaxing.  Travis and Brook went on a camping trip sponsored by Brook’s school to Sunset Crater.  They went with Scott and Ellie and a few other people from the Montessori.

From what I was told, they had a blast…they hiked the Lave Fields and visited an old Native American Ruins.  The kids all played well together and Scott and Travis had fun hanging out having a couple of beers after the girls went to sleep in their tents.  It was Brook’s first camping trip and I think she had a great time and will want to do it again.

So, back to the supposed to be relaxing part…

On Saturday, I got a call from Mom F. freaking out because Shannon called her and told her, “not to worry, but I’ve been struck by lightning Mom,” before the connection broke.  Mom F. wanted me to find her and to figure out how to get help to Shannon.

Honestly, struck by lightning?

At first, I had a hard time believing it…it just wasn’t sinking in…who gets hit by lightning?

But after a few minutes of digesting the news, I started to get concerned.  I knew she was hiking in Globe with her friends, but I didn’t know which mountain range.  I started calling the fire department and hospitals, but no one answered the phone.  I finally got a hold of someone at the Globe Police Department.  She told me she hadn’t heard of the accident, but she was State of Globe and not County of Globe.  She told me to hold on and she would find out if the County was dealing with this case.

They were and through her I found out that there were no casualties and two people were being Medivaced back to Phoenix.

CASUALTIES???  I know she said no casualties, but hearing that still freaked me out.  Karen (Shannon’s BHF – best hiking friend), called me soon after that and told me which hospital Shannon was at.

I rushed right over there and when I got there, I was informed I couldn’t see her with Blake…I was trying to hold back tears soooo badly, I just wanted to see my friend for myself and make sure the doctors were right about her prognosis.  Luckily, two nurses came out and said they would watch Blake so I could see her and I took them up on their offer.

I rushed to her room and when I saw her, I couldn’t hold back my tears anymore…I hugged her and told her she only had seven more lives left, so she better use them wisely!  (I count the Harley accident as life number 1).

She really is okay…she’s a little sore and has some minor tingling and dizziness, but nothing that won’t get better with time.

Really though, it’s amazing that she survived with barely a scratch…it really makes you appreciate life and the small moments.

In the game of life, there are sometimes unexpected twists and turns and really all we can do is live in the moment, love hard and laugh often.

All Systems Down…

So, I’ve done a huge SNAFU…

I accidentally erased basically this weeks worth of pictures from my camera’s memory card…

And I think I’ve lost my I-pod…

It hasn’t been a good week for me in the technology department…

Therefore, I will try, try again for the daily picture…pick up where I left off basically…We will just be a week behind…

No need to cry over it, what is done is done (as I sniffle and feel a little sorry for myself)…
